Use an 8 x 8 pan
1/2 cup plus 2 Tablespoons peanut butter, preferably natural style
2 Tablespoons soft or melted peanut butter
3/4 cup powdered sugar
1 to 1 1/2 cups pretzels
3/4 cup to 1 cup mini chocolate chips, milk chocolate
1/4 cup chopped peanuts or mini chocolate chips, optional
Mix peanut butter and butter.
Stir in 1/4 cup powdered sugar until thoroughly incorporated. Set aside for a moment,
Place pretzels into food processor and pulse until ground to desired size. Alternatively, place pretzel pieces in resealable plastic sandwich bag and crush to desired size. (I prefer a variety of sizes with no piece being larger than 1/2 inch.) If using the bag method save the bag to use when patting the mixture into the pan.
Add in remaining powdered sugar (1/2 cup) and pretzels. If desired, add the optional 1/4 cup peanuts or chocolate chips.
Press into 8 x 8 pan (the 9 x 9 pan was too large). Use the pretzel bag to protect hands while patting peanut butter mixture into the pan.
Sprinkle with 3/4 to 1 cup mini chocolate chips.
Place in 500 degree oven for 5 minutes to melt chocolate. Use an off-set spatula to smooth the chocolate over the peanut butter mixture. Alternatively, melt chocolate in microwave.
Let cool about 30 minutes before placing in the refrigerator to cool. Cut into bars and enjoy.
